Haud Yer Wheesht! - Scottish Country Dancing Instruction Video

It is used to instruct someone to stop talking or to cease making noise. The word "haud" is a dialectal variation of "hold", and "wheesht" is an onomatopoeic term for the sound of shushing or hushing.

Therefore, when someone says "Haud yer wheesht", they are essentially urging someone to remain silent or to quiet down.
